Box o Wine and a New Dish

Often times you get stuck in a rut when it comes to what to have for dinner, I know we do. So when EF pulled out this recipe book – we were sure to spice up a hum drum Tuesday evening.

If you know us at all, you know we LOVE spicy food. In our opinion, a dish is not a good dish unless there is a kick of spice behind it. So of course we could rummage up some inspiration from this bad boy.

EF selected a Caribbean roti dish with potato chickpea (chana) curry. This dish is especially close to my heart, so I was all for it. A roti  is similar to an Indian naan bread, except that it is unleavened. Inside this sinful bread you can add in a variety of different stuffings, but we chose a spicy veggie option. This is a traditional West Indies dish, and words on this blog cannot describe how delicious it is. We topped the whole thing off with a Cucumber Salad (recipe from the Joy of Cooking) to cut the spice and add a little coolness.

We enjoyed this meal with a few glasses from the Bota Box. The Bota box is a box of wine, containing four regular bottles ($18). It is pretty economical, and environmental! The box is made from 100% post-consumer fibers, the paper layers are bonded together with cornstarch instead of glue, all ink coatings are soy based, and the box is 100% recyclable. But really, its just an excuse to buy a box of wine.

After a big meal and some wine, we were all pooped. A tuesday night success!
